So this is most definitely the easiest recipe in the world!
Take a pint of vanilla bean ice cream and let it sit for about 10 minutes at room temperature...
Dump the vanilla ice cream into a medium/large bowl.
Slowly mix in your favorite brand of cognac with a mixer on low speed. Taste occasionally to get the ice cream to your desired strength.
Once you get your ice cream to the desired strength, scoop and serve!
For added texture sprinkle a small amount of graham crackers on top...
You can save the left-over ice cream in the freezer. If your ice cream gets too soggy to serve re-freeze it before serving.
This recipe also works well with just about any cordial. Other options include:
- Bailey's and Amaretto
- Mint Bailey's
- Spiced Rum
- Coconut Rum and Amaretto
