Open-Face Rarebit MY WAY

Naughty sandwich to fill all your cravings...

A long time ago I worked in an Irish-American Pub. This pub featured a great selection of Irish food, but with a spin on it. Over time, I eventually tried everything and I had my favorites, but every morning when I came in I was just craving breakfast.

Then one day it hit me, this pub had a rarebit open-faced sandwich. I'm crazy about pushing the flavor boundaries. The sandwich was sitting on the counter to be picked up right next to a jar of apple jelly. Nothing fancy, just plain old apple jelly. So I asked the cook if he could make me a rarebit with apple jelly and a fried egg. Voila! It stuck... for me at least. Everyone else thought I was crazy but I think it is still worth a go.


  • One solid slice of bread, whatever kind you like with breakfast (I use wheat which holds up nicely)
  • Apple jelly (or apple butter, if you are fancy)
  • One egg
  • Thick slice of cheddar
  • Thick slice of white american cheese
  • 2 tomatoes slices (if you like tomatoes, it is fine without)
  • Slice of Canadian bacon (or ham, whichever you like)


This is pretty simple because you cook everything separate and then you stack it. But make sure you stack it MY WAY. There is a method to my madness!

Toast your bread to your liking, not too dark, as you will heat this again (I don't recommend putting butter on it, it's already not the healthiest).

Spread about 1 tsp of jelly on the toast (or more if you are a condiment whore like me).

In a pan, lightly cook your Canadian bacon and your tomatoes. Then stack on top of the toast.

Fry your egg to your liking and place on top of the Canadian bacon and tomatoes.

Lastly place your cheese on top, just like with the David/Andrea burger it helps keep everything in.

Now, heat in a toaster oven, regular oven, or in a pan (covered) to melt everything all together.
